- 1 pound of shredded chicken
- 1 heaping cup full of shredded lettuce
- 1/2 teaspoon garlic powder
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/2 teaspoon of onion powder
- 15 egg roll wrappers
- 15 slices American cheese
- Water
- Vegetable oil or canola oil for frying
- Ranch sauce for dipping
In a large bowl, put some shredded chicken. shredded lettuce, garlic powder, salt, black pepper, onion powder, and shredded American cheese. Then mix it up with a wooden spoon.
My mommy always cooked this recipe once a year and that is only on thanksgiving. she dance while she measuring her food. Her dance be the music off her phone. Some of the music is the voice of my great grandmother when she always use to cook. She sing that to me because that what my great grandmother song to her and it's a family traditional.
She is standing at the counter getting out the egg roll wrappers, water and vegetable oil. I look and stand around the counter and the table and get what I think she needs. She had forgot to get the oil so we put some Aluminum Foil on the top of the bowl for nun thing would get in it and to keep it fresh.
We got back home she washed her hands and put up some item's. She turned on the skillet and put some oil in the skillet. So she let that get warm. While doing that she open the windows of the kitchen and let the breeze come in. Then she turned around and I was behind her and she had a measuring cup full of water and it wasted on me and on the floor. We had too clean it up with a mop and a towel.
We has waiting on the oil to heat up and we played a little game. We played Uno the card game. I was shuffling the cards while she get through in the kitchen . I deal the cards she said I was cheating because I had all the good cards. At first I was winning but she caught up and beat me. I had a frown on my face but she was happy.
The alarm on the stove went off, and she started stuffing and rolling the egg rolls. She put them on some paper wax. She put some in the skillet for it can cook. It only stayed in the skillet for 2 to 3 minutes. She also baked some of them in the in the oven at 350 degrees for 10 to 12 minutes. I turned them over once during the cooking until got turn golden brown.
The only time she cook the egg rolls is on thanksgiving. When it come around I like to help with the food. The memory would become though, over shadowed by the memories of forgotten recipes, forgotten moments. The tastes of the holidays won't leave the family for years as we watch movies together. My uncle also, made them before he died with adenocarcinoma cancer and heart problems.
It has been a year since I tasted chicken egg rolls. My grandma cooked the dressing, aunt cook cakes and potatoes salads, mine while my mommy cook home made German chocolate cake and chicken egg rolls. The family done moved forward and preserving those memories.
